Roast Chicken, Maryland

 There's clearly a comma in the title of the recipe but I am not sure if it refers to a person or point of origin. The handwriting is very old and I am not sure that 18 minutes is a long enough cook time for chicken. Assume setting the oven at 350 degrees. .

Ingredients

1 small chicken
salt and pepper
egg, beaten
bread crumbs
butter
1/2 pint cream
bacon, broiled
corn fritters

Process

1. Take the legs and wings off a small chicken, season with salt and pepper, and dip in beaten egg, roll in bread crumbs, and place in buttered pan. 
2. Pour over melted butter and roast for 18 minutes. 
3. Pour 1/2 pint cream sauce on platter, placing chicken on top, and decorate with broiled bacon and corn fritters. 

I havent' found a family recipe for corn fritters yet, but there is this one one my blog already.
