I am so excited to see a family recipe for Welsh Rarebit as it is one of my favorite meals. When I read the recipe out loud to SP he made a face of distaste with the 1 cup of hot milk. He uses beer at the end. We will have to try this sometime soon.
"To 1 cup cheese cit in small pieces add 1 beaten egg, salt, pepper, mustard, and 1 teaspoon flour. Mix and add 1 cup hot milk. Cook in double boiler until smooth."
Serve over pieces or toast or crispy bread.
