Taco Hand Pies



This recipe is from Lemons for Lulu and it was a lovely way to switch up our usual Taco Tuesday. It uses pie crust, which next time I might roll thinner or maybe even some puff pastry sheets instead. The kids loved them and they were perfect in their lunchboxes the next day.

Ingredients
  • 1 box refrigerated pie dough (14.1 oz)
  • ¾ lb ground beef
  • 1 teaspoon olive oil
  • ½ teaspoon salt
  • ¾ teaspoon chili powder
  • ¾ teaspoon paprika
  • ¾ teaspoon onion powder
  • ¾ teaspoon garlic powder

  • ¾ teaspoon cumin


  • ½ cup black beans


  • ¼ cup shredded cheddar cheese


  • 1 egg, lightly beaten


  • ½ teaspoon water

  • Instructions
    1. Heat olive oil in a large skillet over medium heat. Add ground beef, stir to crumble. Add salt, chili powder, paprika, onion powder, garlic powder, and cumin; stir. Continue to cook until beef is no longer pink and seasoning has been incorporated. This should take 8-10 minutes. The beef mixture should thicken as it cooks. Stir in black beans, remove from heat and set aside to cool.
    2. Preheat oven to 425. Sprinkle flour over a work surface. Roll out one sheet of dough. Cut dough into circles using a 3-inch biscuit cutter, rerolling scraps as necessary. Repeat with remaining sheet of dough.
    3. Arrange half of the circles on a baking sheet that has been sprayed with cooking spray. Place a tablespoon of meat mixture on the dough circles, top with roughly a half teaspoon of cheese. Place the other circle halves over the meat and cheese mixture. Pinch edges together with the tines of a fork Combine egg and water in a bowl. Brush egg wash over the top of each hand pie. Bake in the oven for 13-15 minutes or jut until golden. Remove from oven and let hand pies cool slightly before serving. Serve with your favorite taco fixings on the side.
    4. Store hand pies in the refrigerator in an air-tight container or a zip-top bag.

    Taco Ring

    This is a GREAT dinner for kids. Its a variation on the taco theme, and can be fun for the kids to help assemble!

    TACO RING

    Ingredients:
    ~1lb ground beef (or chicken or turkey)
    ~2 cans crescent rolls
    ~ 1 package taco seasoning (or make your own)
    ~grated cheese (A "mexican" mix or whatever you like)
    ~sour-cream
    ~Picante sauce or taco sauce.

    1. Prepare the ground beef according to the directions on the taco seasoning.
    2. Heat the oven to the specified time on the croissant package.
    3. While the taco meat is simmering, prepare the "ring". Here's the picture, but the explanation is below.

    Open both cans of croissants and separate each piece. Create a "star" pattern with the croissants on a pizza stone or other similar type of pizza pan. I use a small cup in the center as the base and lay the short flat edge of the croissant about 1 inch up the cup.
    Image Continue to overlap the pieces all around the cup until you have used all the pieces, making sure there are no open spaces along the base.
    4. Flatten the center of the ring to create a base for the filling.
    5. Scoop the taco meat onto the base you've created.

    6. Layer cheese on top of the meat, then close the ring by pulling the long ends of the croissants up and over the meat and cheese. Make sure the filling is completely sealed inside the croissants.
    7. Remove the cup and smooth the croissants along the ridge.

    8. Place in oven and cook for according to the directions on the croissant package.

    When fully cooked the crust will be a light golden brown. I let it sit for 2-3 minutes before cutting so the breading has time to "set". We use a pizza cutter to cut into the ring. Use the sour cream and picante as a topping if you wish.

    Super Easy Fish Tacos


    I made this tonight - great for the kids, healthier choice than fish sticks with tartar, and made a wonderful salad when I omitted the wrap for myself.

    Ingredients
    Frozen fish sticks
    1 small (10 oz.) bag thin cut cabbage/coleslaw mix
    3 + tablespoons Mayo
    1 tablespoon lime juice
    Fresh salsa like Sisters Salsa
    Small tortillas or soft taco wraps

    Process
    1. Cook fish sticks according to directions.
    2. In a medium bowl, combine mayo and lime juice. Toss in coleslaw and mix. You may need to add more mayo and lime juice, but not too much as it is not to be the wet consistency of coleslaw.
    3. In wraps or in a bowl if you want to omit the wrap, place some of the cabbage mix.
    4. Next place cubes of fish sticks.
    5. Dab a bit of salsa on top.
    Wrap it up and eat it.
