"Halve 3 fryers and roll well in flour, salt, and pepper. Melt 2 Tablespoons butter and the same amount of lard in deep iron skillet. Fry chicken quickly, cover tightly and steam for 1/2 hour until tender. Shake some flour over chicken. Pour 2 cups cream over the whole and simmer until gravy thickens. Serve hot chicken gravy separately. "
