Strawberry Balsamic Chutney

Roasted Balsamic Strawberries 

 Our friend Nick is a local caterer and he delighted us at a recent event with a delicious appetizer. It was a crustini made from slices of toasted baguette with a smear of goat cheese topped with a balsamic strawberry chutney. I couldn't get enough! Luckily, Nick was kind enough to explain to me what it was and how he made it so now I have the skills to recreate it at home. We are only eating for two around here now that all the kids are away at school and college, so fortunately SP knows how to make lovely toasted baguette slices! 

Ingredients

2 Tablespoons Olive Oil
1 shallot, chopped thinly
1 clove garlic, minced
1 large container strawberries, diced
2 teaspoons honey
pinch of salt
1/4 teaspoon ground thyme
1/2 teaspoon cinnamon
a couple of grinds of fresh black pepper 
2 Tablespoons Balsamic vinegar
a couple of dashes or dribbles of Balsamic glaze

Process

1. In a medium pan, heat the olive oil over a low medium heat. 
2. Add the shallot and garlic and saute until soft  and not browned. 
3. Add the strawberries, honey, salt and spices and saute. 
4. You can turn the heat up a bit, and when softening,  start mashing with a potato masher.  
5. When it becomes one blended pot, add the vinegar and the glaze and simmer for a while on lower heat as it reduces just a bit. 
6. Remove from heat and spoon into a glass jar to cool in the fridge. 
7. Serve on crustini on top of a slathering of goat cheese.  Yum!

Indian Chicken Strips


I received this recipe from my sister Mush during one of my bridal showers. This dish is to DIE for. Everyone loves it - even the kids, that is when I leave out the cayenne. It is the yummiest most scrumptious and simplest Indian dish I know. I know a lot of Indian recipes but I don't plan on sharing many of them. I am already drooling for dinner, as these beauties have been marinating in the fridge since last night. The picture doesn't do it justice, but I am pretty sure you will want to dive into the bag with the chicken. I wanted to lick the inside of the blender when I was done making the marinade - no joke! Serve as an appetizer (kinda like Satays) or as a meal, served with rice and Raita.

Indian Chicken Strips
serves 6 to 8

Ingredients
3 lbs chicken - boned, skin, and cut into strips

marinade:
5 tbs vegetable oil
4 tbs red wine vinegar
1 med onion peeled and chopped
1 whole head of garlic peeled and chopped
1 inch cube fresh ginger peeled and chopped
2 tbs fennel seeds
2 tbs ground cumin
2 tsp ground coriander
seeds from 8 cardamom pods
1 tsp cinnamon
8 whole cloves
20 black peppercorns
1/2 to 3/4 tsp cayenne
2 tsp salt
3 tbs tomato sauce

Process
  1. Combine all marinade ingredients in blender and blend until smooth.

  2. Combine chicken with marinade mix well and cover.



  1. Refrigerate 4 to 5 hours.


  2. Preheat broiler. Spread chicken in single layer on tray. Broil 10 minutes or until lightly browned.


  3. You can also choose to grill them, but don't use a high heat/flame or you will incinerate the yummyness off of them. *** note we grill these when doubling or tripling the recipe for a large group.

ENJOY!!! Serve with rice, Raita, and vegetable - or as an appetizer.

Martha Stewart's Feta Radish Spread


This recipe is all Martha, but yet another wonderful use of radishes. I particularly like the use of Greek yogurt in it.

Ingredients

Serves 4

  • 5 tablespoons extra-virgin olive oil
  • 2 pocket pitas, split open
  • 1 package sheep's-milk feta cheese (8 ounces), coarsely chopped
  • 1/4 cup plain whole-milk yogurt, preferably Greek
  • 2 tablespoons fresh lemon juice
  • 3 tablespoons coarsely chopped fresh flat-leaf parsley
  • 4 radishes, quartered and thinly sliced (about 1/2 cup)

Directions

  1. Preheat oven to 350 degrees. Using 2 tablespoons oil, brush insides of pita rounds. Cut each round into 6 wedges. Arrange wedges in a single layer on a baking sheet, oiled sides up; toast until golden brown and crisp, 7 to 10 minutes.
  2. Meanwhile, pulse feta, yogurt, lemon juice, and remaining 3 tablespoons oil in a food processor just until mixture is thick and spreadable, about 10 pulses. Transfer to a medium bowl, and stir in parsley and radishes. Serve with pita crisps.

Aggie's Hors d'oeuvres

Aggie is my Godmother, and all this recipe is is a list of ingredients written in HiHo's unique handwriting. Without proportions, I make this in a food processor, season to taste, and then served with crackers like a pate or chicken salad.

Ingredients
ground chicken
mayonnaise
coriander
cumin
salt and pepper
ginger
garlic (1 small)
onion (1 small)

HiHo's Hors d'Oeuvres

Today I have decided to throw order out the window, go back in time, and post recipes from HiHo's recipe box.

Why would I do something so non-linear on a day like today?

Because today is a day like no other, a day I mark time with, a day that 10 years ago changed our family life irreversibly, when HiHo died suddenly and unexpectedly.

Today I am wishing her, and my brother, sister, and father; peace and happiness with music, flowers, and good home cooking!

One thing HiHo was notorious for was keeping track of what she served her guests. Every dinner party she even had was documented, with a list of the guests and what she served. She had notations written on the cards about where the recipes were found. The difficult part has been the detective work it took to figure out what cookbook or chef, for example, C.C. stood for. Better yet, many of her recipes were ideas written out on a recipe card and added to over time, so that there are no ingredients, proportions or instructions, just a written out idea of what she had in mind. So now I present to you, some of these ideas a card simply listed as Hors d'Oeuvres.

Hors d'Oeuvres
  • Smoked salmon wrapped around cucumber
  • Hearts of palm marinated in salad dressing
  • Smoked Oyster in top of slit cherry tomato
  • Pickled carrots
  • Chopped and sauteed mushroom sandwiches - extra thin bread, only butter, no mayo.
  • Roasted pecans
  • Pickled watermelon rind, wrapped in bacon, and broiled.
  • Cream cheese with chutney or sweet/sour mustard
  • Endive with pate dip.
