Banana Coconut Rolls

 What a simple Yankee dessert recipe - I just wish I had the recipe for the hot lemon sauce but I did find a link on Spruce Eats!

Process

Roll whole peeled banana in lemon juice and then into grated coconut. Bake and serve immediately with hot lemon sauce.

Coconut Curried French Lentil Soup
Ingredients
  • 2 Tbs Coconut Oil
  • 3 Cloves of Garlic, minced, about 1½ Tbs
  • 1 Yellow Onion, small dice, about 1 C
  • 1½ tsp Cumin, ground
  • 1 tsp Curry Powder (I use hot madras)
  • 1 tsp Thyme, dried
  • ½ tsp Cinnamon, ground
  • 6 C Vegetable Broth
  • 1½ C French Green Lentils (aka Lentiles du Puy), picked through and rinsed
  • 2 Bay Leaves
  • 1 Can of Coconut Milk (14 oz) with 2 Tbs reserved for drizzling
  • ½ tsp Sea Salt
  • ½ tsp Ground Black Pepper
  • 2 Sprigs of Fresh Cilantro, chopped, for garnish (optional)
  • 4 Sprigs of Fresh Thyme, for garnish

Antiguan Coconut Tarts

Some childhood memories are stronger than others and our family's trip to Antigua when I was in 3rd or 4th grade is etched so firmly in my psyche it remains so familiar I feel it could be yesterday.

It was  a trip offered to us by family friends we had a beach side house with a Jamaican woman named Doreen help that would cook and clean for us. We toured buildings in a town near Johnson's Point where there were large open window bays and poor Sam, jumping through them, tripped and dislocated his elbow.

 Doreen was particularly helpful when I fell sick from drinking the water - who knew? - and took days to recover, but the kind and helpful Doreen was so good at caring for me. When I was back up and at it we combed the beaches and body surfed. In the evenings, people would approach us to sell their wares but no matter how hard I begged Dad and Hi-Ho would not buy me the hallowed out giant sea stars because in fact I did find one of my own. I found it the afternoon I refused to swim any longer, after being pile-driven head first into the sand by one unnoticed poorly planned wave. That day the ocean got the better of me and ever since I don't trust the surf any longer.

 Oh Antigua - you were a magical trip. The smells, and visions, and most of all tastes stand out to me. On the front porch one evening, playing my first ever game of cribbage, Doreen made this for us and it was an amazing culinary treats. They are heaven in a bite. They take a bit of time and effort, but are the best treat ever.

Ingredients
I whole fresh coconut
1 cup sugar

Directions

  1. Grate coconut. 
  2. Dry coconut in roasting pan on top of the stove, stirring so not to burn. 
  3. Cook sugar and coconut - stirring constantly - until the mixture can be shaped. 
  4. Shape and cool and let dry for about 24 hours so the tarts will harden.

Chocolate Dipped Curry Coconut Macroons

Chocolate Dipped Curry Coconut Macaroons

Macaroons:
14 ounces (1 standard-sized bag) unsweetened coconut
1 large egg white
2 teaspoons Madras curry powder
1/4 teaspoon tumeric
1/4 teaspoon fine-grain salt
6 ounces (or 3/4 cup) sweetened condensed milk
Chocolate Ganache:
6 ounces semisweet chocolate chips
1/2 cup heavy cream, plus 2 tbls
Pinch of fine-grain salt
1. Preheat oven to 350F. To a medium bowl, add the unsweetened coconut. (*See tip below for unsweetening sweetened coconut.) Set aside.
2. In another medium bowl, add the egg white. Using a hand mixer, beat the egg whites until light and fluffy, about 2-3 minutes. Sift in the curry powder, tumeric and salt. Fold in the spices until totally combined.
3. Add the egg white mixture to the coconut and mix until the coconut is evenly coated. Next, mix in sweetened condensed milk.
4. Using an ice cream scooper, place a scoops onto a parchment-lined baking sheet. Bake for 15 minutes, until the edges and tops are lightly golden brown. Transfer to a wire rack to cool completely.
5. Place the chocolate chips in a small bowl. Heat the heavy cream in a small saucepan; take the cream off the heat just before boiling. Pour the cream over the chocolate chips and add the salt; allow to sit for 5 minutes. Stir until the ganache is smooth.
6. Rest the macaroon on a fork and gently place it in the ganache (the fork will help with getting the macaroon in and out of the ganache easily). Transfer the macaroon to parchment paper or wax paper lined baking sheet. Repeat the process until all of the macaroons are dipped in chocolate. Place in the refrigerator to set for at least 30 minutes. Allow to come to room temperature before serving *Note, I left mine out for a couple of hours in a VERY warm apartment and the bottoms got a bit gooey, still delicious, but a little warning: your fingers will get chocolatey!
*How to unsweeten sweetened coconut: To start, place the sweetened coconut in a sieve or fine-mesh strainer. Place the strainer filled with coconut under hot water. Wash the coconut thoroughly until the water runs clear. Spread the coconut out on a paper-lined baking sheet to dry (will take an hour or so), or alternatively you could place it in a salad spinner and give it a whirl until dry.

Yields 20 cookies

Hello Dollies

I recently requested this recipe from my sister Mush so I could make it for a festival we go to every summer. It is easy to make and stores easily without refrigeration! Delicious and fattening, it is hard to turn these yummy desserts down!

Ingredients
1/4c butter
1c Graham cracker crumbs
1c chopped nuts
1c semi sweet chocolate morsels (I also add butterscotch morsels)
1c flaked coconut
1can (14 1/2 oz) sweetened condensed milk

Directions
  • Preheat oven to 350 degrees.
  • Melt butter in 9" square pan
  • Sprinkle crumbs,nuts,morsels, and coconut over butter in layers.
  • Pour milk over the top. Do not stir.
  • Bake in oven at 350 for 30-35 min.
  • When cool, cut into squares and enjoy!
Makes 3 dozen.
