Individual Jam Cakes

This is another Martha Stewart recipe I have loved for years. She calls is Individual Strawberry Jam cakes. This recipe was one of those pull out recipe cards from Martha Stewart’s Living in November of 2003. This HM (high Maintenance) muffin recipe is a superb use of time, particularly when looking for a breakfast option when your house is full of men heading out to go hunting or fishing in the early morning hours, which is what I did, that fall of 2003. I was also very pregnant with Daughter, so I remember a lot about that houseful! You can make this any time of the year, for breakfast, snack, or dessert, and use any kind of ham or jelly you can think of!  

 

Ingredients (Yields 6 cakes)

 1 stick unsalted butter, room temp 
3/4 cup sugar 
1 teaspoon finely grated orange zest 
2 large eggs, separated
 1 1/2 cups all-purpose flour 
1/2 teaspoon baking powder 
1/4 teaspoon salt 
1/4 cup milk 
6 Tablespoons (or more) jam or preserves 
1 1/2 cups confectioners’ sugar 
1/4 cup orange juice  

Process 

1. Preheat oven to 350 degrees. 

2. Butter standard muffin tins and set aside. 

3. In a mixer, beat butter with sugar and zest until light and fluffy. 

4. Beat in egg yolks one at a time until creamy. Set aside in new bowl and clean mixer bowl. 

5. Into another bowl, sift together flour, baking powder, and salt. 

6. Add flour mixture and milk, in alternating batches to butter mixture and set aside. 

7. In a clean mixer bowl, whisk egg whites to soft peaks and fold into batter. 

8. Divide half the batter among the muffin cups. 

9. Make and indentation in the middle of each and fill with 1 Tablespoon jam. Top each with remaining batter. 

10. Bake in preheated oven about 30 minutes or until a toothpick inserted comes out clean. 

11. Turn the cakes out of the muffin tins and transfer to a wire rack, over parchment paper, to cool.

12. In a small bowl whisk together confectioners sugar and orange juice. Drizzle cooling cakes with glaze.

Concord Grape Jam

 I was ecstatic to find Concord Grapes at our local farmers market. It is such a delightful fruit to work with and nothing is better than a PBJ with home made jam!

I used 4 pounds of grapes, off the stem and rinsed in cold water. 

Ingredients

4 pounds de-stemmed and washed grapes
1/2 cup water
3 and 1/2 cups sugar
Juice of one lemon

Process

1. De-stem and rinse all of the grapes. 



2. Add the grapes and water to a non reactive stock pot and bring to a boil. 



3. Reduce heat to medium and simmer until they pop open like cranberries and soften. This takes about 20 minutes. 
4. Using a food mill and it's finest sieve, grind the grapes into a pulp over a bowl. 



5. Return the pulp to the cook pot, measuring how much pulp you have.
6. Using a 2:1 pulp:sugar ratio, add half that amount of sugar. For example, I have 7 cups of pulp, therefore I added 3.5 cups sugar. 
7. Add the juice of the lemon and bring to a simmer. 



8. Continue simmering until it thickens which was also roughly 20 minutes. 
9. Funnel jam into jars, wiping the rims before adding the lids. 
10. Process in a hot water bath for ten minutes.

Wonderberry (or Huckleberry) Jam

These wonderful fruits are not berries at all but a member of the Tomato Family. This recipe, brought to you from Bluebird Hill Farm, is an easy way to make use of the Solanum melanocerasum fruit which is an herbacious annual in the nightshade family.

* * * Caution! Do not eat the fruit raw! * * *

Huckleberry Jam

Ingredients
1 lb fruit (3 cups berries pulled from stems)
1/2 cup water
1 cup sugar
1 lemon juiced

Process
1. Add water and fruit to the pan and simmer to soften. ( ~ 15 minutes)
2. Mash the fruit. I use a potato masher.
3. Add lemon juice and sugar.
4. Cook until the jam sheets from the spoon ( ~10 minutes)
5. Refidgerate - do not can as acidity has not been tested. 

Yield = 2 cups
Time = About an hour

Strawberry Jam

It is strawberry season in Maine! I had to close out the Jam month of the Food in Jars Mastery challenge by including some strawberry love!

Quick and simple and from one of my favorite cook books, Put 'Em up!, this jam was put up in a pinch!
Because when I have a million things to do on a Friday before the college reunion we host arrives at our house, I decide to add making jam to the list!



The recipe was really quick which made my hasty decision so much more rewarding.

Ingredients
1 cup sugar
1 TSP Pomona's Universal Pectin
4 cups strawberries, hulled and slices
1 teaspoon calcium water (in the Pomona Box)
1/4 cup bottled lemon juice

Process
*** boil your jars asap as this recipe goes quickly!***
1. Combine the sugar and pectin in a small bowl and set aside.
2. Place the berries in a medium non-reactive pot and crush with a potato masher.
3. Bring strawberries to a boil, stirring frequently to prevent scorching.
4. Stir in the calcium water and lemon juice.
5. Slowly pour in the sugar and pectin mixture, stirring to dissolve.
6. Return to a boil and stir to be sure it is heated through.
7. Remove from the heat and let sit 5 minutes, stirring occasionally to release air bubbles.
8. Skim off the foam.
9. Pour into hot jars, affix the lids, and process in the hot water canner for 10 minutes!

A Real Simple Blueberry Jam


I made these three jars of simple jam from two pints of local high bush blueberries. Yum. Three cans begin my canning season and I take that as a very good sign.
I found the recipe in Real Simple's July 2011 edition. You can find the recipe here. It truly is really simple.
