Apple Tart

Fresh Red Delicious Apple, Each - Walmart.com 
 "Place the quantity of apples to be used in a saucepan after peeling, coring, and slicing them. Add a little sugar and water together with some grated nutmeg and lemon peel. Cook until apples are tender and cool. Cover shallow pie dish with pastry, add apples. Put strips of pastry on top. Bake in moderate oven until crust is easily separated from dish. "

Bacon, Cabbage, and Apples

 Quick Cabbage with Bacon and Apples

 Serves 4

Ingredients

3 bacon slices, cut in 2 inch pieces
1 small head red cabbage, coarsely cut
3 tart apples, cut in small pieces
1/4 cup vinegar mixed with 1/4 cup water 
1 Tablespoon brown sugar
2 whole cloves
salt and pepper

Directions

"Saute bacon briefly. Add chopped cabbage and apple pieces. Stir in bacon drippings for a minute and transfer to a greased casserole dish. Mix and add remaining ingredients. Cover tightly and cook slowly for 1 hour in medium oven. Serve with tossed salad and rye bread."

Apple Zucchini Muffins

This is another recipe from Crunchy Creamy Sweet that I can not wait to try! Apple Zucchini Muffins that will help me put away all the zukes popping out of the garden!

Apple zucchini muffins:

2 cups all-purpose flour
1 and ½ teaspoon baking powder
¼ teaspoon baking soda
1 cup granulated sugar
1 teaspoon salt
1 cup shredded zucchini (see note)
1 cup shredded apple (one medium apple, I used gala)
1 teaspoon ground cinnamon
1 cup buttermilk
1 teaspoon vanilla extract
¼ cup vegetable oil
1 large egg

Preheat oven to 400 degrees F.

Line a muffin pan with paper liners or spray with a non-stick baking spray. Set aside.

In a large mixing bowl, whisk together the dry ingredients (flour, baking powder, soda, sugar and salt).

Add shredded zucchini and apple. Stir to coat with the dry ingredients.

In a medium mixing bowl, whisk together buttermilk, vanilla, oil and egg.

Add to the dry ingredients and stir in with a spatula or a wooden spoon. Do not overmix. Lumpy batter is okay.

Using a regular ice cream scoop, scoop the batter into the muffin pan, filling one scoop per muffin.

Bake muffins in 400 degrees F for 5 minutes. Without opening the oven door, lower the temperature to 375 degrees F and continue baking for 12 minutes. Check the muffins with a toothpick or a dry spaghetti noodle to see if done baking. If the muffins are too pale on top, add two more minutes of baking. They should have golden brown edges and golden tops.

Cool for 10 minutes in the pan, then remove onto a cooling rack, plate or cutting board.

notes: It is very important to squeeze as much moisture from the shredded zucchini and apple as possible. To do so, place shredded zucchini and apple on a stack of two paper towels and squeeze in your hands over the sink. You can use a colander with small holes but the paper towel method works the best.

Chicken with Cranberry Compote

Ingredients
4 boneless skinless chicken breasts
2 Tablespoons lemon juice
2 Tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup dried cranberries
1 cup boiling water
2 Tablespoons butter
1/2 cup chopped celery
1/4 cup red onion, diced
1/2 cup tart apple, chopped
1/4 cup cranberry juice
3 Tablespoons apple juice
1 Tablespoon red wine vinegar
1/4 teaspoon ground coriander
1/8 teaspoon allspice.

Process
  1. Combine first 5 ingredients, soak for 15 minutes, drain and then cook.
  2. Soak the cranberries in the boiling water for 15 minutes.
  3. In skillet over medium heat, melt butter.
  4. Add celery and onion to butter and saute.
  5. Add apple and cranberries and stir.
  6. Add juices and vinegar and cook until the liquid is reduced by half.
  7. Add coriander and ground allspice. This makes the compost.
  8. After chicken is cooked, serve it topped with the compote.

HiHo’s Apple Cake

Ingredients
2 teaspoons cinnamon
5 Tablespoons sugar
5 DELICIOUS apples; peeled, cored and sliced
3 cups flour
3 cups sugar
3 teaspoons baking soda
4 eggs
1 cup Wesson oil
1 teaspoon salt
Juice of one orange
2.5 Teaspoons vanilla

Process
1. Preheat oven to 350
2. Mix first three ingredients in large bowl and set aside.
3. In another bowl, mix remaining ingredients and beat 5 minutes.
4. Grease and flour pan.
5. Pour into tube pan by layers, first batter then apples then batter and finally apples.
6. Bake in oven for 1 and 1/2 hours

Spiced Maple Apple Butter


Ingredients
16 to 20 apples
2 cups water
3 to 4 cups sugar
1 cup pure maple syrup (or more along the way if you like the taste)
2 teaspoons cinnamon
1 teaspoon allspice (or more)
1/2 teaspoon nutmeg
1/2 teaspoon cloves

Process
  1. Core and chop apples (no need to peel).
  2. Put in 9 quart pan and bring to a boil.
  3. Stir several times and continue until it looks like all apples are mushy.
  4. Remove from heat.
  5. Run through food mill.
  6. Return to pot and add remaining ingredients.
  7. Bring to a boil, stirring frequently.
  8. Reduce heat to medium or medium low and cook stirring frequently.
  9. You want the mixture to reduce and congeal reaching a stiff sauce consistency. It will become quite molten so watch out for splattering.
  10. When finished, ladle hot butter into hot jars and arrange lids.
  11. Process in a hot water canner by bringing to a boil and keeping at a boil for 10 minutes.
Enjoy! The perfect breakfast toast spread this time of year! I love the addition of syrup.

Red Cabbage Salad

I of course love this one because of the artistic display involved in it. Kudos to Mima for thinking up such a thing!

Ingredients
2 red cabbages
1 apple; peeled,cored and chopped
1 onion peeled and chopped
1+ kippered herring, chopped
salt
mustard
mayonnaise
vinegar

Process:
  • Scoop out the insides of one red cabbage, chop fine, and place in bowl.
  • Add apple, onion and kippered herring. Stir.
  • Add salt, mustard, mayonnaise, and vinegar stirring to desired consistency and seasoning to taste.
  • Halve the second cabbage.
  • Put first cabbage on plate, placing leaves of second cabbage around it. Fill shell with salad.
  • Serve with toothpicks and leaves of second cabbage. Put scoop in shell to scoop out onto leaves. Enjoy.
