Cheddar and Walnut Appetizers

 This recipe is a tiny clipping from some magazine from who knows where! This sounds really good! I however will use pecans as walnuts make the roof of my mouth itch. What is that anyway, a small allergy?

Ingredients

1 cup grated cheddar
2 Tablespoons flour
salt
chili powder
oregano
1 egg white, stiffly beaten
walnuts, coarsely shopped
butter

Process

 1. Combine 1 cup grated Cheddar with 2 Tablespoons flour, 1/2 teaspoon salt, 1/2 teaspoon chili powder, 1/4 teaspoon oregano, and 1 egg white beaten. 
2. Form the mixture into balls and roll coarsely chopped walnuts and chill thuroughly. 
3. Just before serving, saute the balls in butter.

Fried Mashed Potato Rings

I made these for a Super Bowl Party.I found this recipe Potato Rings with Homemade Buttermilk Ranch on my new favorite blog to follow SpoonForkBacon. And of course, not only does my iPhone take lousy pictures, but of course my rings look no where as beautiful and perfect as theirs. How do you master double dipped egg battering with out getting it lumpy?
I highly recommend these morsels of yummyness! The mashed potatoes themselves were fantastic with caramelized onions and chives! Yum! And then battered and fried and dipped in home made ranch? Heaven!

Marietta's Fried Chicken

I want to know who Marietta is!

Marietta's Fried Chicken

Ingredients:
3 fryer chicken
flour
salt
pepper
2 Tablespoons butter
some lard
2 cups cream

Process:
  • Halve 3 fryers
  • Roll well in flour, salt, and pepper
  • Melt 2 Tablespoons butter and some lard in a deep iron skillet.
  • Fry chicken quickly: cover tightly and steam for 1/2 hour until tender.
  • Shake some flour over chicken.
  • Pour 2 cups cream over all and simmer until gravy thickens.
  • Serve hot chicken and gravy separate.
