Curry of Meats

Coconut Beef Curry 
bouquet garni 
 
Serves 4 to 6 people
 
"Use 2 pounds of meat or 5 pounds chicken. Cut into small pieces (if veal use 1 pound shoulder) ..."
yea none of that makes any sense
"... 4 onions, Brown in 2 Tablespoons peanut oil. Heat water to boil 3 cloves garlic. Put meat with onions when they are brown. When it is brown gradually cover with bouillon and ounces of hot water. Add salt and pepper, bouquet garni, 2 carrots, 1 to 2 cloves, and ginger. Don't let it boil too hard. Prepare sauces: 3 Tablespoons flour, 3 Tablespoons  curry, 3 Tablespoons peanut oil. Mix well. Make sauce with butter, flour, and tomato paste. Cover and cook for 1 hour. When ready to serve, add 1 Tablespoon soy sauce. Serve with chopped hard boiled egg, chutney, coconut, sliced radishes, lettuce leaves, chopped peanuts, Bombay duck, dry rice, soy sauce in cups, a little bit of green onion, and thin slices carrots."

Curried Zucchini Soup

 Serves 4 to 6 people

Ingredients

4 zucchini (washed and thinly sliced)
3 T butter
2 onions, thinly sliced
1 clove garlic, minced
2 teaspoons good curry powder (Madras)
3 cups chicken stock
1 Tablespoon lemon juice
1 tsp salt
dash cayenne pepper
1 cup medium cream
parsley

Process

1. Place sliced zucchini in colander, sprinkle heavily with salt, and allow to rest 30 minutes. 
2. Melt butter in a large frying pan, add sliced onions, and garlic and cook over low heat for 5 minutes, or until onions are translucent. 
3. Add curry powder and cook slowly another 2 to 3 minutes. 
4. Wash and dry zucchini and add to the frying pan. 
5. Cook over low heat another 5 minutes.  
6. Season with salt and pepper, add the chicken stock, and when the stock begins to simmer, cook for 10 minutes or until zucchini is still a bit crisp. 
7. Put mixture through a food mill or blender. 
8. Add lemon juice and chill. 
9. When chilled add the cream and top with a sprig of parsley.

Curry Dip

 In high school, I was a vegetarian and an athlete who would  come home famished and craving a hearty snack before dinner. More often than not, I whipped up a curried dip to eat vegetables with. I recently had that craving again and whipped this up. It's been a welcome addition to our sap boils on the weekends. 

Ingredients

1 cup mayo (listen I love mayo, but if you don't try sour cream or yogurt?)
1/8 teaspoon cayenne
1 to 2 teaspoons Curry powder (adjust to preferred taste)
1/2 teaspoon chili powder
1 teaspoons ketchup (or more if you like)
1 teaspoon onion pwder
2 teaspoons dried chives
1 teaspoon apple cider vinegar (I use Braggs)
salt and pepper to taste

Process

Easy peasy - combine all the ingredients and enjoy with what ever you want to dip in it.

Chicken Divan from Beth

Beth made Chicken Divan last night and I loved it! I had never heard of it before even though it seems to be fairly wide spread and well acclaimed. As a lover of curry it really hit the spot, but I love that she was inspired to do it from green beans from her grandparents garden. She told me that there are many variations out there but she combines elements to taste, therefore several ingredients listed don't have specific amounts. 

Ingredients
3 Chicken cooked breasts (shredded or cubed)
A couple handfuls green beans, steamed
Cooked Rice (for serving)
For the topping:
3 TBS melted butter 
4 cloves garlic, minced
1 to 2 cups Panko bread crumbs
Parmesan cheese
For the sauce:
2 cans "Cream of" condensed soup
1 cup mayonaisse
1 cup sour cream
1 cup shredded white cheddar
1 cup white wine
3 Tbs lemon juice
3 to 4 TBS curry
salt and pepper (to taste)

Directions
1. Cook the chicken. Shred or cube it.
2. Steam the beans. 
* preheat oven to 350 degrees *
3. In a skilled melt the butter. 
4. Saute the minced garlic in the butter. 
5. Add the Panko, stir to combine, and toast until golden brown. 
6. Remove from the heat and add Parmesan cheese to taste.  Set aside. 
7. Start the rice.
8. Prepare the sauce from the ingredients above. 
9. Combine the meat and the veggies on a bowl with the sauce and mix well. 
10. Add to a baking dish and spread evenly. 
11. Top with the Panko mixture from skillet. 
12. Bake at 350 degrees for 30 minutes. 

Serve over the rice.

Indian Dinner Mashup from Inspirallized and Monsoon Spice

On a recent maple syrup Saturday I planned a vegetarian Indian feast. There were three recipes I made so it was quite a bit of a mash up. I absolutely failed at one recipe so I turned it into a soup, or  maybe it was more of a mash, either way it really tasted wonderful!

















Unfortunately, you can't see that absolutely amazing spiralized carrots with Tandoori chickpeas from Inspiralized. I switched the recipe up a bit by serving it all cold. It was the first dish I made that day so it rested in the fridge for quite some time. I really liked the Tahini sauce as well. Please click the Inspiralized link to follow the recipe. I highly recommend it.

Thanks to dear Abbeth who made my paneer, I gladly made this Mattar Paneer Kurma from Monsoon spice. It is in the pot to the right and is far tastier than it looked in my picture. The funniest thing is I am only now realizing that I forgot to add the peas. DUH!

And then there was the mess up, I mean the mash up. I don't know if I can blame operator error, dyslexia, or a confusing recipe. The way the ingredients were broken down at the beginning, didn't seem to match the directions and I wanted to rewrite it but I don't have the time right now. It was a Monsoon Spice recipe for Vegan Beetroot Kofta Curry. I will revisit this recipe, I promise, but it will be done with care and maybe another set of eyes without other dishes being spun around.

With that said I did find another beetroot Kofta Curry recipe that I will try first. It is from Cook with Manali and I would like to compare the two.

Chicken with Chutney

We were in Connecticut last weekend celebrating my brothers birthday. We stayed in Madison at my Dad's "Gal Pal" Susan's house. She cooked us this lovely chicken on Friday night. Shown by the state of the cards below, this is a well loved recipe. There is an error on the card - the author omitted the 1/2 cup of chutney that goes on it. I will write it into the recipe below, and add that as a garnish, Susan added water chestnuts and pecans for a little added crunch. Yummy dinner loved by the whole family.

Ingredients
 2 boneless skinless chicken breasts
1/2 cup chutney (Major Greys or better)
1/2 cup mayonnaise
1/2 cup sour cream
1 teaspoon curry (or more)
1 lemon
freshly ground black pepper

Process
 1. Preheat oven to 450 degrees
2. Place chicken flat in oven dish.
3. Combine mayo and sour cream in a bowl.
4. Stir in the chutney and the curry.
5. Squeeze in the juice from the lemon.
6. Cover chicken with this mixture. If you are adding the water chestnuts or pecans add them here.  Season with pepper.
7. Bake for 20 minutes and Voila! Check meat with a thermometer to be sure it is at 170 degrees.

I hesitate to even put them on here, but darn, this is a really yummy meal.

Coconut Curried French Lentil Soup
Ingredients
  • 2 Tbs Coconut Oil
  • 3 Cloves of Garlic, minced, about 1½ Tbs
  • 1 Yellow Onion, small dice, about 1 C
  • 1½ tsp Cumin, ground
  • 1 tsp Curry Powder (I use hot madras)
  • 1 tsp Thyme, dried
  • ½ tsp Cinnamon, ground
  • 6 C Vegetable Broth
  • 1½ C French Green Lentils (aka Lentiles du Puy), picked through and rinsed
  • 2 Bay Leaves
  • 1 Can of Coconut Milk (14 oz) with 2 Tbs reserved for drizzling
  • ½ tsp Sea Salt
  • ½ tsp Ground Black Pepper
  • 2 Sprigs of Fresh Cilantro, chopped, for garnish (optional)
  • 4 Sprigs of Fresh Thyme, for garnish

Slow Cooker Chicken Curry from the Lemon Bowl


Slow Cooker Chicken Curry 
We made this last night for our evening of pumpkin carving. I really like the incorporation of Sweet potatoes in this and need to be honest that I really doubted they would be done in time. I procrastinated as long as possible to open the crock but to my pleasurable surprise everything was done completely. Even the kids ate it adding a dollop of sour cream/ yogurt to it. We will definitely do this again, maybe adding a bit more kick next time.



Slow Cooker Chicken Curry from The Lemon Bowl

Ingredients
  • 1 pound boneless, skinless chicken breasts
  • 1 medium onion - thinly sliced
  • 15 oz can chickpeas - drained and rinsed
  • 2 medium sweet potatoes - peeled and diced
  • ½ cup coconut milk - light
  • ½ cup chicken stock - low sodium
  • 15 oz can tomato sauce
  • 2 tablespoons curry powder - salt-free
  • 1 teaspoon salt
  • ½ teaspoon cayenne powder - optional
  • 1 cup green peas - frozen
  • 2 tablespoons lemon juice
  • cilantro - optional garnish
Instructions
  1. In the bottom of the slow cooker, whisk together coconut milk, chicken stock, tomato sauce, curry powder, salt and cayenne.
  2. Add chicken breasts, onion, chickpeas and sweet potatoes. Using tongs, gently toss ingredients together to ensure evenly coated.
  3. Cook on Low for 8 hours or High for 4 hours.
  4. Stir in peas and lemon juice 5 minutes before serving.
  5. Serve over rice and with plenty of fresh cilantro.

Chocolate Dipped Curry Coconut Macroons

Chocolate Dipped Curry Coconut Macaroons

Macaroons:
14 ounces (1 standard-sized bag) unsweetened coconut
1 large egg white
2 teaspoons Madras curry powder
1/4 teaspoon tumeric
1/4 teaspoon fine-grain salt
6 ounces (or 3/4 cup) sweetened condensed milk
Chocolate Ganache:
6 ounces semisweet chocolate chips
1/2 cup heavy cream, plus 2 tbls
Pinch of fine-grain salt
1. Preheat oven to 350F. To a medium bowl, add the unsweetened coconut. (*See tip below for unsweetening sweetened coconut.) Set aside.
2. In another medium bowl, add the egg white. Using a hand mixer, beat the egg whites until light and fluffy, about 2-3 minutes. Sift in the curry powder, tumeric and salt. Fold in the spices until totally combined.
3. Add the egg white mixture to the coconut and mix until the coconut is evenly coated. Next, mix in sweetened condensed milk.
4. Using an ice cream scooper, place a scoops onto a parchment-lined baking sheet. Bake for 15 minutes, until the edges and tops are lightly golden brown. Transfer to a wire rack to cool completely.
5. Place the chocolate chips in a small bowl. Heat the heavy cream in a small saucepan; take the cream off the heat just before boiling. Pour the cream over the chocolate chips and add the salt; allow to sit for 5 minutes. Stir until the ganache is smooth.
6. Rest the macaroon on a fork and gently place it in the ganache (the fork will help with getting the macaroon in and out of the ganache easily). Transfer the macaroon to parchment paper or wax paper lined baking sheet. Repeat the process until all of the macaroons are dipped in chocolate. Place in the refrigerator to set for at least 30 minutes. Allow to come to room temperature before serving *Note, I left mine out for a couple of hours in a VERY warm apartment and the bottoms got a bit gooey, still delicious, but a little warning: your fingers will get chocolatey!
*How to unsweeten sweetened coconut: To start, place the sweetened coconut in a sieve or fine-mesh strainer. Place the strainer filled with coconut under hot water. Wash the coconut thoroughly until the water runs clear. Spread the coconut out on a paper-lined baking sheet to dry (will take an hour or so), or alternatively you could place it in a salad spinner and give it a whirl until dry.

Yields 20 cookies

Braised Cardamom-Curry Lamb

For Christmas, SP received a copy of the book Around my French Table by Dorie Greenspan.
SP has wanted this book since we made "Pumpkin stuffed with everything good" back in November of 2010. Dear Hi-Ho's birthday was on January 12th and I wanted to make something in her honor. When I asked Mush what Mom would have had, she said leg of lamb. So the search for a lamb dish was on and this is the delectable feast we settled on. I highly recommend the book and the recipe! The pictures don't do the recipe justice- and I really need a camera versus just my iPhone.




And following in Hi-Ho's tradition of marking our recipes, SP added a special notation for Mom. Love and miss you Mom- happy birthday!

Ground Meat Curry

Ground Meat Curry

This recipe originated with a wonderful cookbook I brought when Puckstopper was starting to more complex meals about 11 years ago. The book was called One-Recipe Three-meal Family cookbook by Sara Lewis. This curry was my favorite recipe from the book. I just passed the book on to La and knew I needed to extract this recipe from it!


Ingredients

I onion, chopped

1-pound ground meat of choice.

1 clove garlic, crushed and minced

2 teaspoons mild curry paste

2 teaspoons red wine vinegar

½ cup plain breadcrumbs

1 Tablespoon tomato paste

¼ cup raisins (or more)

1 Tablespoon mango chutney, minced

1 banana, sliced

2 eggs (or 3 eggs whites? I haven’t tried it but I am pretty sure it will work)

4 teaspoons turmeric

½ cup skim milk

4 small bay leaves


Process

1. Preheat the oven to 350.

2. In a frying pan over medium heat onion and meat. Cook until meat is brown.

3. Add garlic and curry paste and stir well cooking for a minute or two.

4. Remove from heat and stir in vinegar, breadcrumbs, tomato paste, raisins, and salt and pepper to taste.

5. Stir in the chutney and banana slices.

6. Put meat mixture into a round baking dish and press flat into an even layer with a spoon.

7. Place dish on baking sheet and cook for 20 minutes.

8. Meanwhile, blend the turmeric, milk and salt and pepper with eggs.

9. Remove baking dish from oven and lay the bay leaves on top of the meat.

10. Pour the egg mixture over the top and return baking dish to the oven.

11. Bake for 30 minutes more, or until the egg has set.

12. Serve with a side of vegetables and maybe a baked potato?

Spiced Chicken Burgers with Peanut Sauce


I found this recipe in a Parenting magazine at the Pediatrician's office today. I was there because the kids are sick and this meal looks quick easy and yummy. Hopefully H2 will like it as she's the most delicate palate in the house - but she special requests peanut butter and peanut butter sandwiches everyday, so hopefully the sauce wins her over!

Ingredients
  • 1 lb. ground chicken
  • 2 tsp. red curry powder
  • 1 tbsp. fresh ginger, peeled and grated
  • 1 tsp. salt
  • 1/3 cup natural peanut butter
  • 1 tbsp. honey
  • 1 tsp. lime juice
  • 1 tbsp. soy sauce
  • 1 dozen mini-pita rounds
  • 1 cucumber

Directions
  1. Preheat broiler. Combine ground chicken, red curry powder, fresh ginger, and salt, mixing well. Form into 12 balls and flatten to 1/3-inch-thick patties. Broil 3 to 4 minutes per side, or until cooked through and lightly browned.
  2. Combine peanut butter, honey, lime juice, soy sauce, and 2 tablespoons water in a glass bowl; microwave on high for 30 seconds, then whisk until smooth. Split a dozen mini-pita rounds. Place chicken patties inside pita rounds, and top with a dollop of peanut sauce and 2 cucumber slices.

Indian Chicken Strips

This recipe serves 6 to 8 and it is the yummiest, most delectable chicken marinade I can think of.
Ingredients
3 lbs chicken - boned, skin, and cut into strips
marinade:
5 tbs vegetable oil
4 tbs red wine vinegar
1 med onion peeled and chopped
1 whole head of garlic peeled and chopped
1 inch cube fresh ginger peeled and chopped
2 tbs fennel seeds
2 tbs ground cumin
2 tsp ground coriander
seeds from 8 cardamom pods - yes this is the toughest part of the prep.
1 tsp cinnamon
8 whole cloves
20 black peppercorns
1/2 to 3/4 tsp cayenne - this is where you can crank up the heat if you desire.
2 tsp salt
3 tbs tomato sauce

Process
1. Combine all marinade ingredients in blender.


























2. Blend until smooth.

























3. Combine chicken with marinade mix well and cover.
























4. Refrigerate 4 to 5 hours.


5. Preheat broiler, grill or oven. Spread chicken in single layer on tray. Broil 10 minutes or until lightly browned.

You can also choose to grill them, but don't use a high heat/flame or you will incinerate the yumminess off of them. We grill these when doubling or tripling the recipe for a large group but I have also done it successfully by baking! If baking just broil carefully at the end - turning once or twice for better charring!

ENJOY!!! Serve with rice, Raita, and vegetable - or as an appetizer. Also goes well with Curried Chickpeas!

Curried Chickpeas

Goya Chick Peas 15.5oz 

This recipe will serve 10 or otherwise makes great leftovers. I modified it from the prior post to suit my tastes, and I am proud to call this recipe my own. Feel free to cut in half for your family, our double again for a larger group. It is SO yummy! Goes well on it's own, stuffed in pita pockets or as a side with My Indian Chicken Strips.

Ingredients
6 T oil - or enough to cover the surface of the skillet
2 onions, chopped
3 large cloves garlic, minced
3 Tablespoons (or more!) curry powder
1 teaspoon cinnamon powder
1/4 to 1/2 teaspoon ground cloves
3 cans chick peas, rinsed and drained
2 Tablespoons or more tomato paste
A squirt or two of all natural/organic ketchup (helps thin and add flavor)
a couple pinches of salt and pepper
1/2 cup water (plus more for the end if needed)
1 cup (or more) plain yogurt
Cilantro, chopped
lemon Wedges
Whole Wheat pita pockets if desired

Process

  1. In a large skillet over medium-high flame, heat oil.
  2. When oil is hot, add onion, and cook stirring occasionally, until it starts to soften and become translucent.
  3. Add the garlic, stir, and continue to cook for about 5 minutes.
  4. Add curry, cinnamon, and cloves, and stir allowing to cook until mixed and fragrant.
  5. Add the chickpeas and stir.
  6. Add tomato paste and ketchup, stir and allow to heat a bit.
  7. Add the water and stir to even out sauce on beans.
  8. Season with salt and pepper.
  9. Add the yogurt and stir and allow to come to temp. Add more yogurt or water, or even ketchup or spices, to adjust sauce to your liking.
  10. Add chopped cilantro and stir, continuing to heat for 5 minutes.
  11. Remove from heat and serve with lemon slices and pita pockets, or as a side with my Indian Chicken Strip recipe.

Simple Chickpea Curry

Chickpea Recipes 

Another Martha Stewart Everyday Recipe, but this one peaked my interest!

Ingredients

Serves 4

  • 1 tablespoon olive oil
  • 1 large yellow onion, diced small
  • 3 garlic cloves, minced
  • 1 tablespoon curry powder
  • 1 cinnamon stick (3 inches)
  • Pinch of ground cloves
  • 2 cans (15 ounces each) no-salt-added chickpeas, rinsed and drained
  • 3 tablespoons ketchup
  • Coarse salt and ground pepper
  • Chopped cilantro and lemon wedges (optional), for serving

Directions

  1. In a large straight-sided skillet, heat oil over medium-high heat. Add onion and cook, stirring occasionally, until dark brown around edges, about 6 minutes. Add garlic, curry, cinnamon, and cloves and cook, stirring, until fragrant, 30 seconds. Add chickpeas, ketchup, 1 teaspoon salt, 1/4 teaspoon pepper, and 2 cups water. Bring to a boil; reduce to a simmer, cover, and cook 20 minutes. Uncover, and increase heat to medium-high; cook until sauce is slightly reduced, 5 minutes. Serve topped with cilantro, with lemon wedges alongside if desired.

Simple Curry

Easy Homemade Chicken Curry Recipe by Tasty 

I tweaked a recipe from Tasty Kitchen (which turns out to be from my lovah Jamie Oliver) and came up with this yummy curry. It hit the spot for me as I was nursing a cold on some dreary rainy spring evenings. Easy and delicious.

Ingredients
One bunch Scallions, thinly sliced white and light green parts only
One medium onion, finely diced
One bunch Fresh Cilantro, coarsely chopped
3 Tablespoons Roasted Sesame Oil
10 to 15 teaspoons Curry Powder (the more the merrier on your tongue)
2 Tablespoon Butter
2 cans Coconut Milk
2 large pinches Kosher Salt
the juice of one Lemon
2 blocks Extra Firm Tofu (pressed to Dry And Cut Into 1-inch Cubes) OR 4 boneless skinless chicken breasts cut into cubes
*** adding a dollop or two of sour cream or plain yogurt will cut the spice if you over do it***
Serve over cooked rice.

Directions

  1. In large skillet, heat oil over medium heat.
  2. If you are making rice, start it now.
  3. Add onions and scallions and simmer until translucent.
  4. Add tofu/meat and cook/brown.
  5. Add cilantro and stir to combine.
  6. Add the curry powder Stir everything together.
  7. Add the butter. Continue to stir and cook for 20 to 30 seconds more.
  8. When it’s all simmering nicely, add the coconut milk.
  9. While stirring often, bring everything to a boil, then turn the heat down and simmer for 2 minutes.
  10. Finish the sauce by seasoning it to taste with salt and then stir in lemon juice.
  11. Turn off the heat and serve over cooked rice.
