Avocado Lime Cheesecake Dessert

Ingredients
  • 2 ripe avocados
  • 8 oz cream cheese, softened
  • ½ cup sweetened condensed milk
  • ¼ cup fresh lime juice
  • 1 tsp lime zest
  • 1 tsp vanilla extract
  • 1 cup whipped cream or whipped topping
  •   
    For the layers:
  • 1 cup crushed graham crackers or vanilla cookies
  • 2 tbsp melted butter
  •  
    For the garnish:
  • Lime slices
  • Extra crushed cookies
  • Lime zest
  •  
    Process 
    1.  In a bowl, combine crushed graham crackers with melted butter until evenly coated. Set aside.
     
    2.  In a blender or food processor, blend avocados until smooth and creamy.
     
    3.  Add cream cheese, condensed milk, lime juice, lime zest, and vanilla extract. Blend again until silky smooth.
     
    4.  Gently fold whipped cream into the avocado mixture until light and fluffy.
     
    5.  In serving cups, add a layer of cookie crumbs followed by a layer of avocado cheesecake filling. 
     
    6. Repeat layers until the cups are filled.
     
    7.  Top with extra whipped filling, crushed cookies, lime zest, and lime slices.
     
    8. Chill in the refrigerator for at least 1 hour before serving.

    Key Lime Pie

     Key Lime Pie
    This is another recipe by Craif Clairborne of the New York Times. Hi-Ho was a big fan of his work.  
     
    Ingredients
     
    1 cup sugar
    1/4 cup flour
    3 Tablespoons cornstarch
    1/4 teaspoon salt
    2 cups water
    3 eggs, separated
    1 Tablespoon butter
    1/4 cup fresh or bottled lime juice
    Zested rind of one lime
    Baked 9 inch pie shell
    Meringue pie topping (see below), ingredients:     
  • ¾cup heavy whipping cream
  • 1½ tablespoons confectioners’ (or granulated) sugar, plus more to taste
  • ¼teaspoon kosher salt (such as Diamond Crystal) or ⅛ teaspoon table salt
  • 1 or 2Key limes, to zest for garnish
  •  
     
    Process
     
    1. Combine the sugar, flour, cornstarch, , and salt in a saucepan and gradually stir in the water.  Cook stirring constantly until thickened. 
     
    2. Beat the egg yolks. Gradually stir in the mixture from step one. Return the heat to low and cook, stirring, another two minutes
     
    3. Stir in the butter, lime juice, and rind and cool slightly. Pour into the baked pie shell and cool.  
     
    Meringue topping:

    4. Just before serving, make the topping: In a large bowl, beat the cream, confectioners’ sugar and salt with an electric mixer on medium-high speed until you have stiff peaks, about 2 minutes. Top the chilled pie with the cream, and then finely grate lime zest on top to garnish. Slice and serve. Leftovers will keep in an airtight container in the refrigerator for about 4 days, or in the freezer for up to one month.

    Key Lime Poundcake from delish!



    This simple recipe yields high levels of yum! I made the mistake of doubling it so I now have key lime pound cake for dessert, for a gift, and for the freezer! Thank you delish!




    Ingredients
    For the cake:
    3 sticks butter softened
    1 block cream cheese
    3 cups sugar
    5 large eggs
    3 Tablespoons lime juice
    3 cups all purpose flour
    Zest of 1 lime

    For the glaze:
    1 cup powdered sugar
    1 teaspoon lime juice
    2 Tablespoons water
    1 teaspoon pure vanilla extract
    Zest of 1 lime

    Process

    1. Preheat oven to 350 degrees F

    2. In a large mixing bowl, combine butter and cream cheese until light and fluffy.

    3. Mix in sugar, then gradually add in eggs 1 to 2 at a time, beating on low until combined.

    4. Mix in lime juice, then flour.

    5. Fold in lime zest.

    6. Grease bundt of loaf pans.

    7. Pour  cake batter into pans.

    8. Bake in oven until a toothpick inserted in the center comes out mostly clean, roughly 75 minutes.

    9. Make the glaze: Whisk together powdered sugar, lime juice, water and vanilla. (If the glaze is too thick, add extra water, about a teaspoon at a time.)

    10. Pour on top of cooled pound cake, then top with lime zest and serve.

    Coconut-Key Lime Squares

    I made these yummy bars for dessert last night. Martha Stewart nailed it once again. They were yummy, quick and easy. I will definitely do these again and next time will consider doubling it!
