Potatoes Barigoule

Ingredients

Potatoes
stock 
1 cup olive oil
salt 
pepper
vinegar

Process

 1. Place peeled and washed potatoes in sauce pan. 
2. Cover with stock and boil until tender. Drain
3. Put 1 cup olive oil in a deep frying pan, heat and add potatoes. 
4. Cook until lightly brown. 
5. Place on dish, sprinkle with salt pepper and vinegar. Serve.

Crumbled Ham with Potatoes

 This recipe actually sounds a like a perfect post-Christmas-and-New-Years leftover extravaganza! Not that I won't eat all the potatoes with the left over raclette, but hey a girl can dream!?

"2 and1/2 cups freshly mashed potatoes beaten until light with 1/2 cup hot milk and 1 Tablespoon butter. Add 2 cups chopped cooked ham and 1 teaspoon each of parsley and onion, minced. Grease baking dish, sprinkle with 1/4 cup bread crumbs. Add ham mixture. Sprinkle with another 1/4 cup bread crumbs. Bake until top is well browned. "

Et voila!? That is it, no temp, no time!

KT's Potato salad

I love KT. I love her potato salad. I miss them both. XO

Ingredients
4 to 6 potatoes
1 to 1 and1/2 cups Mayo
1 Tablespoon yellow mustard
1 Tablespoon white vinegar
3 hard boiled eggs
Pepper to taste
Chopped celery (optional)
1/4 cup diced onion

Directions
1. Peel and cook potatoes.
2. hard boil, peel and chop eggs.
3. To make dressing, mix onion, egg, mayo, mustard, vinegar and pepper together. Taste and adjust to liking.
4. Drain potatoes and cool slightly (not steaming but still warm to touch) and then chop and mix with dressing while still warm for max absorption of dressing.
5. Refrigerate. Enjoy!

Potato Quiche

Ingredients
9” pastry shell (many recipes on blog)
2 cups mashed potatoes
1/2 cup light cream
1 Tablespoon butter
3/4 cup cottage cheese
1/2 cup sour cream
2 eggs
1/2 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon cayenne
1/8 teaspoon black pepper
1 and 1/2 cup shredded swiss cheese
4 cups onions.

Process
  1. Preheat oven to 375 or 400 degrees.
  2. Combine potaotes, cream and butter.
  3. Combine cottage cheese, sour cream, eggs and spices and beat until smooth.
  4. Stir in potato mixture.
  5. Add swiss cheese and onion.
  6. Put ingredients into pie shell and bake for 35 to 40 minutes.
  7. Let stand 10 to 15 minutes before serving.

Pizza Night

First you make your dough in a dough machine then you just follow the steps along the way. It really is quite easy... you just need to keep practicing and reinventing your toppings!





































































































































The toppings in these pizzas, in order, are:
crumbled goat meat sausage with sauce and cheese
Sliced potatoes with cheese
And pesto and potato with cheese.

Sue's Potato Salad

A dear friend, who I taught with for 10 years, gave me this recipe as a part of my wedding shower. I have made it many times, and my kids adore it!

Ingredients
2 to 3 pounds red potatoes
4 Tbs+ Tarragon Vinegar
4 hard boiled eggs
3 spears dill pickles
1/3 cup mayo
1/3 cup sour cream
salt and pepper to taste

Process
  1. Cook potatoes, skin on, until fork comes out easily, but not too mushy!
  2. Drain and cool for 15 minutes.
  3. Chop potatoes into chunks while still warm and sprinkle with 3 to 4 Tbs tarragon vinegar (more if desired).
  4. Cover and chill overnight
  5. Add 4 chopped hard boiled eggs
  6. Add 3 spears chopped dill pickles
  7. Dress with mayo and sour cream, and you can add more to reach to desired moistness.
  8. Add salt and pepper to taste.
  9. Serve and enjoy!
