Poor Man's Omelet

Poor Man´s Potatoes & Eggs | CLASSIC Recipe from Extremadura Spain 
 This recipe's name is just screaming with Yankee ingenuity!
"Dice cold boiled potatoes, cook with minced onion until just turning yellow. Pour over eggs beaten with 1 Tablespoon sour cream. Stir until eggs are just set, sprinkle them with salt and freshly ground pepper."

Omelet, Asparagus Sauce

Asparagus omelette 

 Ingredients

 yolks 3 eggs beaten well
3 whites , beaten stiff
3 Tablespoons boiling water
salt and pepper
1 cup cooked asparagus

Process

 1. Add water to the yolks, salt and pepper to taste, and fold in the whites. 
2. Cook as any omelet. 
3. Serve with highly seasoned white sauce to which has been added 1 cup chipped asparagus.

Omelet Souffle

Have I told you I'm not very good at making souffles? I will keep trying tho! 
 
"Take yolks of 3 eggs mix with 6 heaping Tablespoons of powdered sugar and 1 teaspoon and flavoring essence or cordial. Beat to a stiff cream. Beat whites stiff and add the yolks, folding them in quickly. Put in baking pan lined with cold butter. Dust with powdered sugar and bake until delicately brown. 10 minutes in a medium oven, but have oven hot first."
