Ingredients
6 slices bacon
1 onion, finely chopped
1 clove garlic, minced
3 cups fine bread crumbs
1/2 cup pignoli (Italian pine nuts)
1/2 tsp. salt
1/8 tsp. black pepper
1/2 tsp thyme
2 Tablespoons chopped parsley
2 racks spareribs (6 to 7 lbs total)
1/2 cup red wine
1/2 cup honey
1 bay leaf
1 teaspoon dry mustard
Process
1. Preheat oven to 350 degrees.
2. Cook bacon until crisp, saving the bacon fat in the pan.
3. Crumble bacon pieces.
4. Saute onion and garlic in the bacon fat and add the bread crumbs.
5. Add bacon, nuts, salt, pepper, thyme and parsley and mix well.
6. Spread the stuffing over one of the spare rib racks, top with the second and secure with skewers or string.
7. Place in a roasting pan and add the wine and bay leaf.
8. Cover and bake about 3 hours or until tender.
9. Remove cover and increase oven heat to 425 degrees.
10. Combine honey and mustard and spread over the ribs.
11. Bake until meat is glazed.
