This recipe is penned in KK's handwriting which tells me that she loved it and shared it with Hi-Ho. Origin otherwise unknown. Serves 8. KK noted that she strained a can of whole cranberry sauce and used what stayed int he strainer although I am not sure what that means given the ingredients.
Ingredients
4 whole chicken breasts, halved and skinned
1/4 cup butter
1/2 cup chopped onion
2 cups cider
1 tsp salt
1/4 tsp pepper
1 tsp grated lemon peel
1 Tablespoon corn starch
1/3 cup sugar
2 cups fresh cranberries
4 bananas, sliced
Process
1. Melt butter in a saucepan and brown the chicken on all sides. Remove chicken preserving contents of pan.
2. In the chicken pan saute the onion and cook until tender, about 5 minutes.
3. Add 1.5 cups cider, salt, pepper, lemon peel and simmer.
4. Replace the chicken and cook together, simmering for an additional 30 minutes.
5. Remove the chicken.
6. Cmobine one Tablespoon cornstarch with 1/2 cup cider, and blend smooth.
7. Add sugar and cranberries and cook 10 minutes while stirring.
8. Add the chicken and bananas and heat to a serving temp.
9/ Transfer to serving dishes.
