This recipe is in Hi-Ho's handwriting without a reference to where it came from. Yield 4 servings.
Ingredients
Two 2 LB broiler chickens, quartered
3 Tablespoons butter
2/3 cup blanched livered almonds
1 cup white wine
salt and pepper
1.3 cup chopped parsley
Process
1. Saute chicken in butter with almonds until the chicken is golden on all sides.
2. Add the wine and season the chicken with salt and pepper.
3. Cover and simmer over low heat for about 40 minutes or until chicken is tender.
4. Add parsley and more salt and pepper as needed.
5. Serve hot with a side salad and mashed potatoes.
