Ingredients
1/2 cup water
3.5 Tablespoons butter
1/2 cup flour
2 eggs
1/2 cup grated Gruyere
1/2 cup grated Parmesan
Dash of salt
Dash Cayenne
Madeleine pans
Process
- Butter and flour Madeleine pans. Preheat oven 375 degrees.
- Boil 1/2 cup water with 3.5 tablespoons butter.
- When butter melts add 1/2 cup flour all at once.
- Cook stirring, a few minutes, and remove from heat.
- Beat in 2 eggs, one at a time.
- Fold in 1/2 cup each cheeses.
- Add salt and cayenne.
- Drop into prepared molds.
- Bake about 15 minutes and serve hot.
