Process
- Prepare chicken by cleaning and removing skin. Leave bones in.
- Sprinkle chicken with seasonings and sugar.
- Put enough olive oil in frying pan to cover the bottom of the pan.
- Brown chicken on both sides on high heat.
- Reduce heat to medium, cover and cook until chicken pulls back from the bone.
- Uncover pan and cook chicken on low heat.
- Turn chicken every five minutes. Repeat 4 times or until cooked through.
