Marietta's Fried Chicken
Ingredients:
3 fryer chicken
flour
salt
pepper
2 Tablespoons butter
some lard
2 cups cream
Process:
- Halve 3 fryers
- Roll well in flour, salt, and pepper
- Melt 2 Tablespoons butter and some lard in a deep iron skillet.
- Fry chicken quickly: cover tightly and steam for 1/2 hour until tender.
- Shake some flour over chicken.
- Pour 2 cups cream over all and simmer until gravy thickens.
- Serve hot chicken and gravy separate.
