Radish Greens Soup

I have just planted my second crop of radishes, and discovered this recipe is a wonderful way to make those radishes entirely sustainable in the kitchen.

Ingredients
1/2 a stick of butter or more
Coarsely chopped greens from 4 large bunches of radishes
1 sweet onion, finely diced.
4 cups chicken or vegetable stock
salt and pepper to taste
dollop of sour cream
sliced radishes for garnish

Process
  1. In a large saucepan, melt butter over medium heat.
  2. Add onions and saute.
  3. Add radish greens and lightly cook until wilted.
  4. Add stock, and bring to a boil.
  5. Simmer until tender (about 10 to 15 minutes)
  6. In batches, puree in blender (this could take several batches)
  7. Reheat soup in sauce pan. Season to taste.
  8. To serve, ladle into bowls and garnish with a dollop of sour cream and a sliced radish or two.
