Apple Surprise

 "Peel but not core uniformed size apples. Prepare a rich syrup with equal parts sugar and water and cook 5 minutes. Simmer apples in the syrup until they are transparent. Remove apples from syrup. Add 2 Tablespoons grated orange rind to each cup of syrup. Simmer several minutes and then cool. When ready to serve spoon syrup over chilled apples. Serve with whipped cream to which is added riced cream cheese."
