Pumpkin Cake



2 C. sifted flour
2 tsp. Cinnamon
½ tsp. Salt
2 tsp. Soda
2 tsp. Baking powder
Mix these dry ingredients together and add to the following mixture:
4 eggs
2 C. sugar
1 C. Wesson oil
2 C pumpkin

  1. Preheat oven 350 degrees.
  2. Beat wet ingredients together then add dry ingredients.
  3. Add pumpkin.
  4. Bake in 2 nine inch pans for 35 minutes or until cake tests done.
  5. Cool completely before frosting with recipe below.

Frosting (Have all ingredients at room temperature)
1 stick butter or margarine
1 8oz. package Philadelphia cream cheese
Cream together and add:
1 lb. box of confectioner’s sugar
2 tsp. Vanilla
1 C. broken pecans
