Orange Rum Sweet Potatoes

I'm not a fan of canned sweet potatoes and prefer them fresh. It is easy to translate.

2 large cans of sweet potatoes
2 eggs
1/2 cup brown sugar
1/3-1/2 cup orange juice
3 Tbsp. softened butter
5 Tbsp. rum
salt and pepper to taste

1/3-1/2 cup melted butter
1/2 cup brown sugar
crushed pecans (optional)

  1. Preheat oven 350
  2. Mix together until smooth and place in a greased 9x13 casserole dish.
  3. Mix topping and spread over sweet potatoes.
  4. Bake for 50 minutes.
