Super Easy Apple Cake
1 cup oil
1 3/4 cups sugar
1 tsp. salt
1 tsp. cinnamon
1 tsp. baking soda
2 tsp. vanilla
2 1/2 cups flour
1 cup chopped pecans
4 cups granny smith apples, peeled and cut into small chunks
- Preheat oven 350 degrees
- Combine everything except apples in a large bowl with mixer. The batter will seem stiff but the apples will release a lot of water.
- Fold in by hand the apples . This will be hard to do b/c batter is stiff but make sure they are evenly mixed in.
- Pour into a greased bunt pan.
- Bake for 45-55 minutes and let cool on racks.
