Marmalade Fluff


This recipe of Mima's seems to be a perfect recipe to use with the recent Clementine Marmalade I made. It also is a perfect way to learn how to make my own Fluff! Win win!

This recipe serves 4 but can easily be increased. 

Ingredients
4 egg whites
4 Tablespoons sugar
1 Tablespoons orange marmalade
butter

Process
  1. Beat egg whites until stiff. 
  2. Add sugar, beating lightly. 
  3. Fold in the marmalade. 
  4. Butter the top of a double boiler, fill with the mixture, cover and steam one hour. 
  5. DO NOT LOOK AT IT! (underlined)
  6. When ready to serve,  prepare this heated sauce: 2 Tablespoons marmalade, 2 Tablespoons rum, and 1/2 cup hot water.
