Hominy Grits Souffle

Ingredients

2 cups cold cooked hominy grits

1 cup warm milk

1 teaspoon salt

2 Tablespoons butter

2 eggs, separated

butter to grease a baking dish

Process

  1. Preheat oven to 325 degrees.
  2. Take cold cooked grits and add 2 cup warm milk.
  3. Heat mixture to soften, beat well and stir in salt and butter.
  4. Once it has cooked some, add well beaten egg yolks.
  5. Let cool.
  6. Gently mix in stiffly beaten egg whites.
  7. Turn into buttered baking dish and place in oven until it becomes a delicate brown and firm through out.
