2 cups applesauce
1/4 cup sugar
3 Tablespoons rum (the darker the better)
1 Tablespoon grated orange rind
2 cups broken ginger snaps
1/2 cup heavy cream, whipped just before serving the dish
Raspberries to garnish
- Combine applesauce, sugar, rum, orange rind, and gingersnaps.
- Stir until well mixed.
- Just before serving, fold in whipped cream.
- Put mixture into sherbert glasses (size shown below in what we call a Summer wine glass).
- Sprinkle with chopped nuts and garnish with a raspberry.
- Serve and savor!
