Chicken and Sweet Potato Stew

 

SP and Baby thought this one up one January night. 

Ingredients

2 pounds boneless, skinless chicken - cubed

2 large sweet potatoes, peeled and cubed

2 large onions, chopped

1 green pepper, chopped

1 red pepper, chopped 

2 cans coconut milk

salt and Pepper

Oil

4 cups chicken broth

and the spice mix: 

freshly squeezed orange

2 Tablespoons Paprika

2 teaspoons cumin

2 teaspoons Coriander

2 teaspoons Turmeric

1/4 to 1/2 teaspoons Cayenne

2 Tablespoons ground cashews

1. Salt and Pepper the chicken cubes and Saute until cooked. Remove
