Ingredients
4 to 6 potatoes
1 to 1 and1/2 cups Mayo
1 Tablespoon yellow mustard
1 Tablespoon white vinegar
3 hard boiled eggs
Pepper to taste
Chopped celery (optional)
1/4 cup diced onion
Directions
1. Peel and cook potatoes.
2. hard boil, peel and chop eggs.
3. To make dressing, mix onion, egg, mayo, mustard, vinegar and pepper together. Taste and adjust to liking.
4. Drain potatoes and cool slightly (not steaming but still warm to touch) and then chop and mix with dressing while still warm for max absorption of dressing.
5. Refrigerate. Enjoy!
